Breakfast on the Brain: How I Accidentally Became a Morning Meal Person
For some reason, breakfast has been on my mind all day — and I’m blaming it on our Question of the Day. We asked, “If you eat breakfast, what’s your favorite breakfast meal?” And yes, I know a lot of people skip breakfast. I used to be one of them too.
From Skipping Breakfast to Craving It
By the time I finish the morning show, I’ve already been awake for about six hours, and that’s usually when the hunger hits. But my body also tells me it’s weird to eat a tuna bowl or noodles at 9 in the morning, so I tend to lean toward something savory and very breakfast-appropriate.
Also, take it from a girl who will always order breakfast at brunch. It could be 1 p.m. and I’m still ordering waffles without hesitation.
Breakfast has slowly become a part of my routine that I actually look forward to, so I wanted to share one of my go-to recipes that’s been in heavy rotation lately.
My Go-To Protein Bagels
These protein bagels are easy, filling, and perfect whether you like sweet or savory breakfasts. They’re also packed with protein, which helps keep me full well into the afternoon.
Protein Bagel Recipe
Ingredients:
- 1 cup Greek yogurt
- 1 cup flour
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- 1 egg (for egg wash)
Optional Toppings:
- Jalapeños and cheddar cheese
- Cinnamon sugar
Instructions:
1. Preheat your oven to 375 degrees.
2. In a bowl, mix the Greek yogurt, flour, baking powder, and salt until a dough forms.
3. Divide the dough into four equal pieces.
4. Roll each piece into a log and poke a hole in the center to form a bagel.
5. Brush the tops with an egg wash (this is the key to getting them golden).
6. Bake for about 25 minutes, or until golden brown.
7. Let cool slightly before slicing.
Each bagel packs around 25 grams of protein, which is pretty impressive for something this simple.
How I Like to Eat Them
Once they’re cooled, I usually slice them open and add butter or cream cheese. If I’m feeling extra — and want to be full for the rest of the morning — I’ll turn it into a full breakfast sandwich with a maple breakfast sausage patty, a fried egg, and cheese.
