A Local Favorite Is Getting a Permanent Home

Who doesn't love cookies? I love baking them at home, but anytime I'm at the mall, walk past a bakery with fresh cookies, or even see an Insomnia Cookies, I immediately want to stop. I generally prefer making my own food at home, whether it's a meal or a dessert. If I'm being honest, though, I rarely make desserts unless it's for someone else or a special occasion. I'm not the greatest baker, and most dessert shops have truly perfected their craft, creating treats you can take home and enjoy later with a glass of milk or a fresh cup of coffee.

Well, Evansville foodies, this one is for you because some big news dropped this week: Cookie Bite Pastry is opening a real, actual, walk-in brick-and-mortar storefront right here in the city, and I am completely here for it.

Here Is Where You Can Find Them

The local shop is setting up inside the Laval Block building at 2021 W. Franklin Street in the former Siciliano Subs location. I'll admit, I'm just a little bitter about it because I really wanted to try Siciliano Subs before they closed. But at least another delicious business is moving in and calling it home.

No official opening date has been announced yet, but just knowing it's coming is enough to have me planning my first visit already.

Never Heard of Cookie Bite Pastry? Let Me Tell You

If you're not familiar with Cookie Bite Pastry, that's okay, it's pretty new to me too. They're the people behind those viral fruit pastries you've probably seen all over your social media feeds. I've wanted to try those eye-catching pastries for a while, but they've mostly been available in larger cities like Los Angeles and Chicago. Now, they're coming to Evansville.

And it doesn't stop there.

We're talking cookies, cake cups, cupcakes, snacks, and even gluten-free options. Basically, if you've got a sweet tooth, it sounds like they're going to have something for you.

You can place an order right now at cookiebitepastry.com, OR you can catch them in person this Sunday, June 7th at a pop-up event at the Bedford Collab, 1201 S Bedford Ave. They will be there from 10am to 2pm, so go show some love to one of Evansville's own.
