Power Breakfast Recipe: Cheesy Egg Toast with Fresh Veggies
INGREDIENTS
- 1 piece whole wheat toast
- butter, margarine or olive oil
- salt/pepper
- 1 egg
- 1 tbsp shredded cheese
OPTIONAL
- tomato slices
- avocado slices
- smoked salmon cream cheese
- fresh spinach
- green onions
DIRECTIONS
- Butter bread on one side. You can brush olive oil on for a healthier option.
- On the other side, smoosh down a rectangle in the middle using spoon - don't tear bread. Brush sides around rectangle with olive oil or butter. Place in a medium-high preheated pan.
- Salt and pepper inside of rectangle.
- Crack egg and insert into rectangle. Don't break the yoke.
- Salt and pepper egg.
- Cover in cheese.
- Cover pan with a lid - heat for six minutes.
- Preheat broil to 350 degrees.
- After six minutes put under broiler for 3-5 minutes depending on how 'done' you want your egg.
- Top with tomatoes, avocado, salmon cream cheese and green onions.
