Today is National Eggs Benedict Day. What are eggs benedict anyway?

Eggs Benedict is a dish consisting of poached eggs and sliced ham or sometimes bacon on top of a toasted English muffin with hollandaise sauce.

Eggs Benedict is a dish named, some say, after Lemuel Benedict in the 1800's and then others say that the dish was named after Pope Benedict, according to National Day Calendar.

Never in my wildest dreams did I ever think I would enjoy eating Eggs Benedict, but, I did! It happened at Quill Haven Bed & Breakfast in Pennsylvania. Here's a pic!
