I'm no stranger to eating at home, my "normal" routine (meaning before the pandemic flipped our lives upside down) consisted of cooking at home and meal prepping for Monday-Friday and enjoying a couple meals out on the weekends. But here's the thing, I HATE cooking.  I'm not super creative in the kitchen, and I struggle to follow complicated recipes (thank you ADD).  So this is one of my go to recipes that I make all the time, it's easy, has a few simple ingredients, it's delicious, AND you can make it lower calorie (my entire dinner was around 400 calories last night and I ate this whole thing)!
