Sweet & Sour Meatball Ingredients
- 2 pounds Hill View Farms Ground Chuck
- · 2 eggs
- · ¼ cup parsley flakes
- · 1 cup cracker crumbs
- · ½ teaspoon garlic powder
- · 2 tablespoons instant minced onions
- · 2 tablespoons soy sauce
- · ¼ cup ketchup
- · ¼ teaspoon pepper
- · 1 (16 ounce) can jellied cranberry sauce
- · 1 (12 ounce) bottle chili sauce
- · 2 tablespoons dark brown sugar
- · 1 tablespoon lemon juice
How to Make Sweet & Sour Meatballs
1. Combine meat, eggs, parsley, crumbs, garlic, onion, soy sauce, ketchup and pepper.
2. Mix well until blended.
3. Roll into small balls and place in a large baking pan.
4. Combine and heat cranberry sauce, chili sauce, sugar and lemon juice.
5. Stir and cook until cranberry sauce is melted.
6. Pour over meat balls and bake uncovered at 350 degrees for 30 minutes.
You can serve these as an appetizer for game day or tailgating. Just keep them warm in a crockpot or over a sterno and they'll be a hit! Or you can make a meal of them by preparing some zoodles as a side. Made from zucchini and squash in long strips like spaghetti or fettucini, it's a great way to get veggies into your kids (or yourself) and take advantage of produce that is still growing strong as summer turns to fall.
Zoodles Ingredients
- · 2 medium zucchini or yellow squash
- · 1 tablespoon olive oil
- · 2 minced garlic cloves
- · 2 tablespoons grated parmesan
- · Salt and pepper to taste
How to Make Zoodles
1. Cut ends off zucchini. Use a spirallizer or julienne blade to cut zucchini into noodles.
2. Heat oil in a large pan over medium heat. Add garlic and sauté for 30 seconds to 1 minute.
3. Add the zucchini noodles and toss for 1 minute or until the noodles have warmed through.
4. Remove from heat and sprinkle with parmesan cheese, salt and pepper. Toss to combine.
5. Serve warm or chilled.
