An old college friend of mine once told me that one of his favorite phrases was "Breakfast Served Anytime." I laughed but then gave it some thought. I'll have to agree that it's a phrase that resonates with me, too.

One of my favorite "anytime" breakfasts has always been in the middle of the night, and I know I'm not alone. I remember finishing busy nights with a stop by any of multiple joints that were once open 24/7.

Wild Eggs - Evansville

These days, it's pretty much Denny's and the occasional IHOP for the late-night crowd. But if you love your breakfast when it's traditionally served; if brunch is more your speed; or if you like lunch with a sprinkling of breakfast, then you may already know and are excited about the arrival of Wild Eggs, opening February 12th at 1223 Hirschland Road, Evansville.

Before I continue, what you're seeing, starting at the top right and moving clockwise, Strawberry Tall Cakes, a magnificent-looking waffle sandwich that I can't find on the menu (likely a limited offering), and Stuffed French Toast. But I certainly hope you clicked that link and feasted your eyes on the full menu. Deviled egg salad? Bloody Mary grilled cheese? Breakfast lasagna? I'm not even hungry, and I'm hungry.

It's a menu that features creative, if not exotic, takes on familiar breakfast offerings, and it's one that keeps bringing in patrons, right and left, to all their locations in Kentucky, Indiana, and Ohio. Lexington's location is wildly popular, if you'll pardon the pun. (Those Eggs Benedict creations look incredible.)

Those cinnamon rolls. That hot chocolate. And on and on. We're less than a month away from the big day, and, if I were you, I'd wear comfortable standing shoes if you go on day one.
