I Tried Making Homemade Chipotle-Lime Salsa [RECIPE + PHOTOS]
For the past couple of summers, our dynamite boss has worked out a deal with Cecil Farms in Owensboro to provide fresh vegetables to the staff each week at no cost to us. The most recent delivery included a couple of boxes of fresh tomatoes. Normally I don't bother grabbing any because I'm not a fan of raw tomato (it's a texture thing), and when I have brought them home in the past for my family, no one eats them, and they end up in the trash. With that said, I do love pretty much everything made from tomatoes (ketchup, pasta sauce, etc.), and I remembered my son recently suggesting we make homemade salsa out of some leftover jalapenos we had in the fridge. So, I grabbed a few to take home and tried my hand at making some over the weekend.
We like to cook at our house, but I had never tried making my own salsa. Thanks to the wonderful world of the internet, specifically the Yummly app on my phone, I was able to find a basic salsa recipe from Simply Recipes appropriately titled "Simple Cooked Tomato Salsa." This would serve as the base for my version. Here's how I put it together using the instructions from the recipe, but tweaking the ingredients a bit.
